You can't change the path during runtime. Just add multiple image fields on top of each other an change their  presence as needed. 

A XFA-based form is just a XDP file in a PDF nutshell. When editing the form in Designer, you're changing the XDP. The surrounding PDF is removed already during opening. Everytime you save the form as a PDF the XDP is packed in a new PDF nutshell, that's why you'll have to apply the password again. 

You can't remove signatures by others, but and only your own. This makes sense because the ability of removing foreign signatures would make the entire idea of signatures obsolete.

This happens if the file is used by another process so saving is blocked or when you're using an older version of Acrobat like 9, X oder XI. Try to save the file with another name, when applying the usage rights. In case you're using such old version of Acrobat, you can't reader enable the PDF anymo...

They are still there but now under Menu > Form options. 

The PDF-Security settings is the right spot for this. Select the allowed changes and then save your form. You'll be asked to set a password for the, which will be neccessary to edit the form in Designer but not when viewing in a PDF viewer.
