Count no. of products a customer is interested in

I am working on a journey where a user needs to be notified via an email if they have showed interest in an item which has gone out of stock and is now back in stock. The email can show max of 5 back in stock blocks depending on the number of items customer has showed interest in. If they have shown interest in 1 item, 1 back in stock block will be visible; if they've shown interest in 2 items, 2 back in stock blocks will be visible. Having SKU as a string in schema, how can i put up the condition in Email content using helper functions? I don't have any array of SKU or products to figure out no. of products a person has shown interest in.

We can't reliably figure out how many items a customer wants in an AJO email just from a single SKU string. AJO helper functions simply can't generate that number how many items are back in stock.
