Why its not possible to change email execution field in the journey

click on the eye icon, at the left of "Cancel" button. You will unhide some other configurations by clicking on it.

Love you man! Do you know if in the campaigns it works the same? 

Any constraints in the journeys while changing the email?

no, campaign's field execution must be configured at channel surface level. You can't change execution address in campaigns like journeys.

 

No constrains in journey by chanching the defautl execution address, just be sure you have data on there. You can pass there also conextual email attribute, no need to have email as profile attribute.

Not sure why you can't access the AEP attributes. Take a look to Configurations - Data Sources and check the AEP data source status.
