How would I create a chart/report with the average requests completed by resource (Assigned To) by week and month?

We are using emojis in the project names  . Unfortunately they cannot be displayed in the charts (e.g. description of a pie in a pie chart). Instead of the emoji random letters and numbers are shown next to the project name. And idea to solve this?
