In the access level permissions, you can only provide View/edit to the objects like Projects, Tasks, Documents etc. But restrict the permissions, you may try the object sharing using View/Contribute/Manage permissions in the task level

Workfront system default 'Requestor' or 'Reviewer' access levels doesnt have access to edit or create projects. The minimum access level they need is 'Worker' and above. You can also create or edit your access levels permissions in the setup.
