I don't think there is a specific way not to collect the only Device and Browser Info as these are provided directly automatically by Adobe and it's not PII or custom user data which your organization wants collect extra from what adobe is providing.

IE11 desktop web browser is disabled as of Feb 14th, 2023. In the later weeks IE is disabled and replaced with Edge in the later weeks. Maybe you are looking at the visitor level in the new previous page report. If you look the report by visit level, the data will match exactly with the old reports previous page report.
