Managing journey lifecycle

Hi all, does anyone have a best resource that discusses Journeys in the context of lifecycle management of versions, which ones are live, how to allow users to complete their journeys in V1 but have all new instances kick off the V1.1 version of the journey?  I know if you stop a journey it ends the journey for everyone in that journey.  what i'm looking for is to bring a journey "offline" which would allow any users in a journey to complete their path and have new triggers of  the journey enter the latest version of the journey only.

This is the default behavior when a new version of a journey is created. Individuals who are already in the previous journey version will finish out the journey, but the old version is closed to new entrants. Any new triggers would put people into the latest version of the journey.
