Drop Down field option for Metadata Profiles?

I'm starting to work with metadata profiles and want to set up a new DAM folder structure to leverage them. We use a lot of drop downs, tied to dictionaries, and I'm not seeing the option to include a drop down in a metadata profile. I see it in the schemas, but not profiles. Is there a way to do this? 

 

To further clarify, I want to leverage profiles to automatically populate some of our metadata fields. For example, we are introducing a "public" folder and I want to set up a profile to automatically enter a distribution field with "external" and a data classification field as "public", taking the work off our digital authors. Both fields are currently drop down fields in the schema. I can't create a profile for this because the drop down field option is not available for profiles.
