Is there a way to create and generate a report for how many times a Team tag is made in a Project or Tasks Updates message? In the report, I also want to add additional column fields to include information about the Project or Tasks.

I would have a go at creating a report on the Note object in Workfront. You can read more on this here.
You should be able to filter to notes (updates) where a specific team was tagged, as well as pull in high level information about the task or project the note was added to.

I'd use a Note report and you can filter specific teams using Team ID = XYZ or if you're looking for ANY team tagged, use Team ID is not blank. Since you'll probably get a ton of results I'd at least filter it to certain projects or a timeframe of note entry like the example below:
This will be a little finicky to do. As Richard suggests, this is a Note report for sure. As each note has the ability of tagging multiple teams or users, this is considered a "collection" of tags. Hardly anyone asks about this, so there are just a few posts in the forum about it--I therefore recommend you start with searching on "ntag" which is the collection you'll be filtering with.
