Project Settings - where to find in Setup, Risk field, etc.

When converting a request to a project, there's a section called Project Settings.

 

1. Is it possible to hide any or all of the fields in this section?

2. Where can I go in Setup to manage these Project Settings? 

3. Risk field - where does this exist on the Project, once it's created?

1) No.

2) You can't.

3) You have to edit the project again, to locate the risk field. i.e. it only exists on the Project Settings and these are only accessible when you edit a project. It's best to put this in some sort of view or report, if you do want your users to be able to make decisions about a set of projects. Many customers would also suggest a report that you could attach to the project as part of a custom dashboard/section.
