We use the document approval process to have our customers review the acceptance criteria document. If they approved the document then we know we can move forward with development. Recently we had a customer go in and add a new update on a document they approved 4 months ago and put it in Approved with Changes. We would like to prevent such an event; our feeling is once a doucment has been approved then it should never be added to or allow users to change the status on the approval.‚

If you are using advanced proofing, you may set the stages to lock automatically based on certain criteria.

If you are not using that but simple doc approvals, you can try the "Check Out" document feature. I see in Workfront One that it says "Check out a document: If you have manage permissions to a document, you can check it out to forbid certain actions on the document. " However, it does not specify what action are forbidden but it may be worth a shot!
