Can you set custom statuses for billing records? Right now all I see are 'Billed' and 'Not billed'. I haven't been able to track down an area where you can add more. Am I just missing it, or is it not possible yet?

The billing status field is not customisable I'm afraid.
A workaround would be to attach a custom form to your billing records with a field that contains your own custom statuses. This field could then be pulled into your billing record view.
