Have you considered using Project / Issue / Task statuses? Our users are assigned a task to review a proof, when they're done with the reviewing they need to click done on the task to signify that it's finished.  If the work is tied to a task you can mark it with a higher profile status if desired.

I have never reached that level of granularity but I wonder how the reporting would work if your role is split 50/50 - Janitor / Head Cook.If the assignment in the project is to the person by name, how does one fully realize which role is being fulfilled?

I'm not sure if the percentage of roles on any individual effects the project plan.  Regardless of their designation if you assign 1 hour to a person the assignment should be 1 hour regardless of their role.
