This should be fixed now in v1.6.1. If the extension doesn't update automatically, go to Manage Extension and click the Update button.

I think it also just uses a sample of recent data to populate that preview. So, if the data in the sample didn't contain the fields you are interested in seeing, it might not display. Preview dataset is handy for a quick sanity check, but a more thorough way to validate would be to use query service...

Keep in mind, too, that deleting a dataset will only delete the part of the profile that is in the dataset you are deleting. It won't delete the profile fragments that are in other datasets.
