By default, the grouping should be in the alphabetical order. You might have applied any sorting on the columns which is causing this.Add the Status in the view and apply first sort on it and add second sort if there is any on other columns.
In text mode grouping , below should work though: group.0.groupdatesby=WYgroup.0.valueformat=atDateAsWeekString or group.0.groupdatesby=DYgroup.0.valueformat=atDateAsDayString

Generally 'Milestone' view would be great to the the high level roadmap of the PROJECTS. you can do this in the Projects area or create a report and check the 'Show the Milestone view' on the Report settings.You can use 'Show Gantt chart view' on the Task type Report.
I would definitely create a Task type report (with maybe below similar filters and groupings).Hope this helps! You can modify the filters further more accurately to pull the desired results.

I dont think there is a limitation on assigning users to the Approval process stages, unless the User(trying to replace with the Job role assignment) you are trying to add in stage 1 doesnt have the job role added to his user profile.
