Edwin, you should be able to do this as a report and perhaps into a dashboard if you always want it available as a tab. Use the Documents Approval report, filter by Document Approval status = pending and requester id = $$USER.ID.

If I multiselect 5 documents for sharing to a user, the user receives 5 email notifications. I am hoping it's possible that a document digest is sent instead for the 5 documents.
