Hi I'm trying to create a custom wait which should wait 7 days after the person received the "What's" email and not wait 7 days after the Open reaction.
So In my journey, after the "Open" reaction I want to add that custom wait activity.

What I mean is, I want the profile to continue the journey 7 days after receiving the email, not 7 days after the open behavior occurs.

We have implemented a use case similar to this. You can make an audience for that specific action, and then have a different journey using a read audience that triggers daily.

We trigger off of sends, not opens, but you should be able to do the same.

But yes, using a customer audience, I think you should be able to use opens
