On every custom form we have one common field with 3 categories on for report purposes. Each request submitted requires the requestor to select the correct category and at the end of the month we report on those 3 categories. However, for some requestors, who are not frequent Workfront visitors, we want to preset /default a category on specific custom forms, not all - is this possible? In the sandbox when I default a category, it defaults across all forms too but wondered if I was missing something as some fields have features just for that form.

You're correct that if you select an option as the default answer, anywhere that field is used will carry that same default, the same behavior about any other properties of the field.
Have you looked into adding validation language to the field? Validation was something released earlier this year, see more about it here towards the bottom of the article. It won't automatically fill in an answer but it could help guide the user on what to fill in based on answers to other questions.
