Adjusting Due Date

Previously, my team was able to request adjustments to due dates of tasks that they were assigned to in the task. They don't have this ability now, is there a way they can help manage the due dates of their tasks without giving them rights to the full project?

Did they once have contribute access and now have view? Was there a change to their license that impacts their project access level?

No, access has stayed the same.

Hm. If their license/access level is the same AND their access level on specific projects where they can't change the date is the same, then I'd ask Support about this.
