What is the best way to create a text file from a bundle of events? I have a watch events module that can have up to 1000 events and I need to get those bundles that contain lots of fields to a text file.

as Fusion does not have a constant file storage, you need to choose a module, which is capable of uploading a file anywhere.
You could also use the Upload document module for Workfront, which could create a text file. Before that you need to aggregate the needed values from your bundles.
The corresponding modules you find under Tools -> Text aggregator or under Flow Control.
