Nope, automatic.

Completion Mode is set to Manual. The Project Status still shows as In Progress for each of these projects; it's just the Percent Complete that says 100%.

Are you saying you have copy and a design that you intend to send out as an email? In that case, I would save as a PDF and send the PDF through Proof.
