You should be able to disable Priorities around the same time as the release to production on October 17th.  Yes, it can be turned back on for everyone whenever you'd like.

Will Admins be able to customize what columns are available for users?On roadmap. Are Admins able to hide using the Priorities option from New Home in layout templates? Can we hide this in the waffle menu?Yes, you will be able to disable Priorities via System > Preferences > General Preferences.
