No EDS does not dependent on AEM.
You need to add CORS and other headers via CDN configuration.
Note: If you are using your CDN then you can add those headers there otherwise configure Adobe fastly CDN

It depends how did you configure the component-model. If you don't use component grouping then you need to read the content from each row. If you use content grouping then you need to read just children nodes

When you delete the page, page is deleted from S3 bucket which the EDS content-hub, where all the content markup is stored.you can check the EDS architecture here : https://github.com/adobe/helix-home/blob/main/docs/architecture.md
