visitor id is not available in the analytics UI (either as a segment or dimension). this is why you're able to do it in data warehouse, and not analytics.The option to pass visitor ID into an eVar is going to be the most viable option, I'm afraid.

I'm afraid customized rolling date ranges in Ad Hoc are not available, though there are more pre-configured rolling dates in Ad Hoc than there are in the web UI.
