I only have journey added in the package and as a dependency, Audience had been added automatically whilst building the package. I am using Email channel config to send emails to users, would that cause an issue if channel config is missing in pre-prod env?

True, as you upgraded zookeeper version and SOLR uses zookeper internally, the SOLR versions should be aligned and support the latest version of zookeeper.
