Could enabling the Create New Profiles option explain some of the delays in email sending? I’m currently experiencing delays when sending transactional emails with this setting turned on.

I think that profile will be waiting in the "Audience Qualification" node until profile enters that audience.

"conextual email attribute" you mean coming from the event? Yes Not sure why you can't access the AEP attributes. Take a look to Configurations - Data Sources and check the AEP data source status.

no, campaign's field execution must be configured at channel surface level. You can't change execution address in campaigns like journeys. No constrains in journey by chanching the defautl execution address, just be sure you have data on there.
