Trouble using the cursor to select pdf form text precisely

When trying to select a bit of text that is in a Text object (as opposed to a Text Field) on a form, the cursor highlights multiple other text objects on the page. 

I'll try to replicate this below:

Is this just the nature of pdf documents, or is it something that can be prevented.

I've made sure to give each text object its own name but the problem persists.

Let's say I was trying to highlight just the end of this sentence.

Notice that other text are selected as well.  This would happen in a form when I would try to only select the text: "end of this sentence."

Its not impossible to select the text i want in acrobat, but it seems to be very sensitive on the forms. Just having the cursor a bit off the centerline of the text and half the form is selected.

Is there any way to make this more like the text in a text field?
