Doubt about change data in Process

Hi,

I have a doubt about how can I change the process info (form) outside of workflow task

For example:

Sara select a date (in Form) in a Assig Task.

The workflow continue..... and... Sara need change the date info. But she hasn't Assign Task.  She wants change the date, because she knows that the date is bad.

How can I do it?
