Choosing which fields (variables) I want sumitted

I need some fields in the form but not all.  Is there a way to assign a variable  to not submit the data in the field?  I am working with a form that contains identifiable information which can not be sent to me, but I need the other information from the form.  I don't want the person completing the form to have to erase the fields. Is there a way to determine which fields/variables I recieve?
