How do I create a cart open event in Launch

Not sure where to start. Seems like it would be available in the Global Variables Extension for Adobe Analytics but it is not. Can you help me to understand how to create this event?

Below eVars and Props you also have Events. scOpen is the event you are looking for in the dropdown.

Thank you, Thomas. I zoomed way out on this so you can hopefully see the options available to me. I am still not seeing "events":

This looks like the Analytics extension itself. Here you don't have events. You need to create a Rule in the rule tab, and use Actions there. I don't have time now to search for the tutorial video, but there is one where each step is explained.
