Add new variation axix to product

Hi all, 

Adobe products have 2 types of variations, color and size.
I'm trying to add new variations to the product, as tariffa for example, but not sure what steps should I take to add them by hand.

Could anyone tell me how to add new variations to the product, unused hybris, and without any other e-commerce platform?
