We're hoping that this may contain something relating to segments but have not been able to find any examples of what this field would contain when populated.
Given its definition (string 255) it seems unlikely that it would/could contain a full list of segments that a visit had fallen into.
Can someone point at some definitive documentation?

Are you using server-side forwarding? You will only get this data when ss forwarding is configured correctly. see How to Verify Your Server-Side Forwarding Implementation
The mc_audiences field is a multi-value field / “list-variable”. The multiple values represent the segment IDs from Adobe Audience Manager’s Server Side Forwarding integration and are given in the subdocument’s value array, with the variable's delimiter as an ASCII character code in the delim property. "mc_audiences": {"values":["1111","2222","9999"], "delim":44}

The column is going to contain a list of Audience Manager segment ID's that the visitor belongs to.
One thing you can do is run the data feed and see the results for yourself.

We've done a number of test runs without managing to get anything in the field (despite having simple segments such as 'chrome browser').Analytics Data Feed: The "mc_audiences" field (Audience Manager segment IDs) is blank. Why?
