I'm not able to select premium eVars more than 100. (refer screenshot attached)

I've verified it and I could notice eVars count is 250. (refer screenshot below)
The number of allowed variables (eVars) is based on contract. Product updated should not have an affect, but any change to contract would play a role.
You can check your current access level within the Admin Console > View Feature Access Level. Then work with your account team to make any needed changes.
