Did you find this Q4 update useful? Honestly, if we can't add custom columns, this feature doesn't really add much value, it just ends up confusing non-admin users. Columns toggle on/off was enough for native fields.
and just curious, why is it called 'All Requests', wouldn't 'All Columns' make more sense? Am I missing something?

It would be nice if they gave us more control over which view is applied here from the admin side. Seems like every release is missing that option.

Wanted to let you know that adding custom column is something that will go live with November fast release and we have view sharing option coming in Q1, that would allow admins to create views and share with the whole organization.
