As far as I believe, all the places where the custom form were attached in the past, you will automatically see the new name once custom form name is changed. If you still want to see the data you can create a report with a filter on the entry date(with before the custom form name change date)

Most of the time the sandbox environments doesnt work as good as Production instance. Automatic email notifications, Single sign-on, maybe even custom integration will not be working properly. You might see the same configs in the Sandbox but I dont think you need to worry about it.
