There is an option for you to add the holiday exceptions in the Schedules functionality.You can create a Schedule for the required groups and add your holidays in the exceptions tab. you have to do this every year though.

You can create a new project from template with the first template you require and after creating it, you will still be able to add the second one using the 'attach Template' option in the three dots beside the project name.
