Very interesting finding. I too tried few ways, by allowing multiple content types at the model here  Its just the new editor, just allows those specific mimeTypes from DAM. Doesnt mean, we can enter plaintext into Content Ref field.  I too couldn't find better solution. I am in AEMaaCS.
