AJO Resend Email Based on Unopened Activity
Does AJO have the ability to deploy an email on one date and resend that same email 2 days later to only those profiles who didn't open the original email? Is this achievable? If so, how?

You can use a journey that starts with a read audience node and schedule it to run on a specific datetime https://experienceleague.adobe.com/en/docs/journey-optimizer/using/orchestrate-journeys/about-journey-building/read-audience
and then use reaction activity https://experienceleague.adobe.com/en/docs/journey-optimizer/using/orchestrate-journeys/about-journey-building/reaction-events#:~:text=Reaction%20events%20reaction-events.%20Among with a timeout of 2 days to check if users opened the email during this period.
