Extracting XML from PDF Using Java

I have an advance pdf form that uses dynamic table and row generation.  I tried using the tool iText 5.0.1, it can read simple forms and extract the XML.  however, when you have an advance PDF's it is unable to read and export the XML.  Does anyone know of a tool that will read in the PDF and we can dynamically extract the XML from within the form with the data content?  We prefer opensource solutions, but others will be ok as well.
