determine which data is added to spreadsheet

I am creating a fillable form that will be sent back to me by the user as a data file. I would like some of the responses to be entered into a spreadsheet, but others are open ended responses that I would not like in the spreadsheet. Is there a way to limit which text fields are entered into the spread sheet?

Not that I am aware of ...it is an all or nothing kind of operation.
