AEM quickstart jar is not available as open source. Your organization must have to give you the access for it. Till then you can learn from adobe documentation for AEM. Below is the link for cloud services. If you are able to understand this concepts before having hands on it will be really useful for you. As a community advisor I would suggest you to go for the cloud as it's the future for the CMS.

@aem-enthu27 One can download the jar file from https://downloads.experiencecloud.adobe.com, if you have the license file.
