On the publish instance the sitemap will be served from sitemap scheduler instead of from on demand?

Based on your sites traffic and update frequency you can go with on demand or scheduled one. If you prefer on demand update the config Apache Sling Sitemap – Sitemap Generator Manager by enabling the ondemand flag and replicate to publishers.
In case you prefer the scheduled generation better caching and utilization of resources update the config org.apache.sling.sitemap.impl.SitemapScheduler~weretail.cfg.json in publish runmode folder and replicate the same.
