Someone deleted a major assets directory in the author instance, and published it.
Now our production site is broken as images give 404.
There is no trash can icon in the assets panel.
In DAM view in aem author, there is a "versions" option under timeline, but this is empty.
Assuming AEM doesnt keep any versions or trash can for restore, how would we automate creating "backup" packages containing the assets and pages every hour or so? The packages would be huge as we have more than 1TB of images.

Adobe take instance backup everyday, you can reach out to them, they will restore from previous state.
We restored some of the content before with the help of Adobe. We were on AMS and had a spear server which we used to restore from the instance backup and then package it and intall to Prod Author.
But in your case you can go for instance restore from previous day backup.
