Typically, you can have below monitoring via workflows:

 

Alerts when workflows are Paused, Failed, Stuck. Refer documentation

Generate Delivery reports like Sent, Failed 

 

It also depends on what do you want to monitor. Please evaluate your environment and see which activity downtime can cause business impact and develop monitoring around that.
