I'm looking to understand what your best practice is for removing projects from the search functionality that are dated/no longer valid? Do you move them to another portfolio? Do something different? How are you successfully doing this without it impacting your YOY reporting?

We have a portfolio titled archives. At the beginning of each month we move all the projects marked complete in the previous month over to it at once using a simple projects report. Only sys admins have access to it so it doesn't appear in anyone else's search, but we can still pull data from the projects for YOY reporting.

May it could try with creating a custom status such as "Archive" for a certain Group, this could be also an approach to solve many because then we hold the the correct portfolio but different status. Also, easier to build report and control the access.

How does moving a project to a different portfolio affect Search?

The only people who have access to the portfolio are system admins, but also all the projects are moved to an administration group which only admins are in and the assignments are cleared. Then the project disappears from the search of everyone save a few selected people.
