We are looking to export/extract issue updates from Workfront for archival. We only see the latest update available in exports. How do we get all the individual updates in a ticket to be exported? Appreciate the help.

Do you mean you want to pull every user update for every issue in Workfront?
You could create a Note type report in Workfront, and filter it so that the Issue ID is not blank, and then export the report.
If you want a specific Issue's updates, you could make it a prompted report.
