There needs to be a way that once you start the Approval process and some approvers have already approved a Task. That if you need to add a new Approver to the process that you can without having to back out your approval process, just to add the new Approver. When this happens, I have to put the Task back in process, go to my Approvals tab, add the new Approver and start the process over from the beginning. Then the Approvers, who already approved have to approve again.
