There is not per se a way to clean the DAM. You can delete folders and assets from the DAM root level at /content/dam Although if you set your new package filer to "/content/dam" it will overwrite the DAM and upon the deployment, you will see only the new assets You need to fix a missing blobId error, prior to uploading a new package with assets. What's stripping the custom tags is XSS filter, which is based on OWASP AntiSamy. You can find and customize the configuration for it under /libs/cq/xssprotection/config.xml. There you can add rules to allow your custom tag. You still need two AEM one runs as an Author, where you can do an authoring and another AEM that runs as publish run mode in read-only mode a that will be your CRM. You cannot deploy AEM site to IIS but you can use IIS as front end as with AEM dispatcher: https://docs.adobe.com/content/help/en/experience-manager-dispatcher/using/dispatcher.html
