You can inline edit a task if given the right permissions. The way I do it is add the people who need the most access to a "PM Team", and give the Team "Manage" access via sharing the project.

It's a mess!!!!! So far what I'm doing is putting projects On Hold and then created an On Hold report so I can track what will need to be reviewed once (if) the world returns to normal.

I would assign him some tasks and sit next to him (or screenshare if you are no longer going into an office) while watching him as he works through what he has to do, and see what he's clicking on.
