Why do we need Workflows here?
How and when do we use Workflows in our use case?
Use it out of box or create a new one?
Do we have a Workflows Creation functionality/screen in RTCDP?

Workflow is like a technical guide , like a wizard guide in AEP , basically to reduce the technical friction .
Currently it only has some functionalities.
eg. where you can use workflow
Ad-hoc Data: When you have a one-off CSV file and need to quickly create a schema and dataset to ingest it.

No, There is no designer where you can built a workflow .You can only use the workflows Adobe has already built
